Merry Christmas, (belated), and Happy New Year. There’s no
sense in one more review of last year since it’s gone, let’s move boldly into
2021. There is great news to start the year.
It’s’ taken intense research, experimentation, investigation
and rigorous testing that took up much of 2020’s spare time. Which is an
explanation for the lack of posting last year. Well worth the effort because of
the end result.
A perfect brew of Chemex Coffee has been achieved. For those
who are truly interested in the history of the Chemex brewer check out the
Wikipedia entry for Dr. Peter Schlumbohm, inventor of it. Us fans of it are
content to sit back and enjoy the rewards of his hard work
You could boldly grind coffee and pour water over it, but
that would be missing part of the ritual of coffee making. Ritual is important
in this day and age, giving a person a sense of continuity
It takes the proper grind, filter amount of water and
coffee. One of the more surprising aspects was getting the correct “pour” for
the brew. Experimentation led to using Sumatra beans and a coarse grind. A
proper grinder would be a burr grinder, but that is best left for another day’s
writing. A final piece of the puzzle
fell into place when research led to the appropriate method and tool for adding
water.
Once all the tools and ingredients are in place a perfect
cup of coffee is achieved. It has clarity akin to made from scratch Consommé,
an enticing aroma, smooth taste and satisfaction.
What makes this truly a great cup of coffee is the fact that
Bond, James Bond, was a Chemex user! So
damn the torpedoes and full speed ahead.
Happy New Year.
